Wow. You really did manage to not mention WikiTravel at all? Come on guys, the full history (and the original volunteers) deserves proper credit rather than being ignored because of conflicts with the current owner. Congrats! But this already exists, though: All the content of the travel guide Wikitravel is Creative Commons Attribution-ShareAlike 3.0. They even use MediaWiki too. So not sure that it’s a good idea to start a competitor, instead of just contribute to make the already existing one even better? http://wikitravel.org/
